THIS HOMEMADE PESTO IS THE BESTO

Homemade pesto is WAY better than store bought pesto in my opinion.

It is more vibrant, more delicious and so easy to make.

Literally just throw the ingredients in a blender and voila!

My favourite way to use the pesto is in my pesto pasta — which I will definitely post a recipe for as well because it is a staple in our house.

You could also have this on eggs, or toast or even as a dip!

Ingredients

2 cups of fresh basil (roughly two bunches)

2 garlic cloves

1/4 cup grated parmesan cheese (or a little more because who doesn’t love parm)

1/3 cup walnuts or almonds (you can also use pinenuts but I don’t love them)

Juice of 1/2 a lemon

Olive oil (roughly 4-5 tbs)

Salt and pepper (the saltier the better in my opinion)

Instructions

Place all the ingredients in a food processor and blend.

Scrap down the sides with a spoon or spatula and keep blending until smooth.

Store in an airtight container for up to 3-4 days in the fridge or pop it in the freezer for up to 3 months.

Note: You can add in extra ingredients such as rocket, spinach or hemp seeds to up the nutrition and it is still super yummy.
